Mamaw's Strawberry Pie.

My dear grandmother knows just how to make me feel special-- by getting up at 4am on a Sunday morning to make me this amazing strawberry pie!

It's super easy and SOOO DELICIOUS!  Plus, it can be made pretty healthy (for a pie, that is).  

  • 1 3/4c. water
  • 1 3/4c. sugar (or splenda)
  • 1/4c. + 1 tbsp cornstarch
  • 1 pkg strawberry Jello (sugar-free works great)
  • 1 quart whole strawberries
  • 2 frozen pie crusts, baked according to package
  1. Stir together water, sugar and cornstarch over medium-low heat until thickened and sugar is dissolved.  Remove from heat and stir in Jello until dissolved.  Set aside.
  2. Place strawberries in baked pie crusts.  (Tip-- Dust bottom of baked pie crusts first with powdered sugar to help prevent sogginess later.)
  3. After Jello mixture has cooled slightly (warmer than room temp, but not hot), pour over berries in crusts.
  4. Refrigerate until Jello is set (approx. 4-5 hours), and serve chilled.  
  5. Keep all leftovers in refrigerator.
