OMG Dinner.

In an effort to save money and calories, I've been making an effort to cook more instead of eating out or getting takeout.  I found this recipe on Pinterest, then saw a modification on Meg's blog.  The original recipe title was OMG chicken, and I agree.  It was amazing!


4 chicken breasts
1c. plain greek yogurt
1/2c. grated parmesan cheese
1 1/2 tsp. seasoned salt
1 tsp. garlic powder
1/2 tsp. black pepper
Bread crumbs (optional-- I didn't use them)

Directions:  Preheat the oven to 375.  Line a baking sheet with aluminum foil and spray with cooking spray.  Place chicken breasts on baking sheet.  Stir together yogurt, cheese, salt, garlic powder, and pepper.  Spread yogurt mixture over chicken breasts.  (Optional: Sprinkle with bread crumbs.)  Bake for 45 minutes.

I paired the chicken with roasted green beans.  To make these, I just cut about 1/4 of an onion into large half-rings, and put the onions with a handful of raw green beans on a baking sheet.  Then I drizzled them with olive oil, and sprinkle with salt and pepper.  The green beans only take about 20 minutes to cook, so I waited until the chicken was halfway cooked then put in the baking sheet of green beans and onions.  Both done at the same time.

Delish!!

  4. Oh that sounds yum! I think I have all those ingredients at home too. I am going to have to try the green beans, I'm always looking for ways to spruce those up. Do you use the canned ones or fresh ones?
