Katie Lately.

It's been over a week since I blogged last, and my husband informed me this weekend that I needed to get back to it so he could have something to read. So supportive, that one... ;) I did miss blogging last week, but I didn't feel like I had much to share. My life for the last two weeks has felt like it has revolved around our Whole30-- planning for it, shopping for it, prepping for it, and cooking for it. It's a LOT of work-- more than I had thought before we got started.  But I must admit that I really do like it.  Twelve days in, and by now I don't have near the cravings like I used to, my digestive issues have markedly decreased, I am generally full from meal to meal without that starving feeling I used to get between meals, and my energy levels are stable (no bouncing up and down) throughout the day.  I actually didn't want to go back to sleep during church yesterday!

The restrictions (which you can read about here-- whole30.com) were very difficult in the beginning, but I've gotten used to most of them now.  I've also enjoyed knowing virtually every ingredient that I've put into my body.  Not to mention that all of our meals have been made by my hands-- it's quite a sense of pride to know that I'm providing that kind of service to our little family.  We've had some DELICIOUS food too.  Our favorites have been these pork chops, spaghetti squash "spaghetti" with meat sauce, roasted Brussels sprouts (which I could seriously eat with every meal), and chicken salad made with this homemade mayo (yes, I actually made my own mayonnaise-- and I like it even better than the store-bought stuff!).
I am a little bit looking forward to it being done so that we can add in things like rice, beans, and even a bit of cheese.  And holy crap, I'd kill for some roasted potatoes...  But I definitely plan on sticking pretty close to these guidelines even when we're done.

In the midst of all this food upheaval, I joined a women's Bible study at my church on Wednesday nights.  It's led by my Bible Fellowship teacher, so some of the girls from our class decided to go.  We're studying the book of Malachi, which I already find fascinating.  I can't wait to get deeper into the study!

And of course, I've been so stoked about the return of The Bachelor!  My friend Katie came over last week to watch the premiere, and it did NOT disappoint.  This definitely looks like it will be a great season-- can't wait to see the first round of dates tonight!

2014 is apparently the year of reading multiple books at once.  I started the year reading both The Gods of Guilt (which was AMAZING) and 204 Rosewood Lane, finishing them both this past weekend.
So I started two more-- Sycamore Row and The Wolf of Wall Street.  (ps-- this is what happens when all the books you've been waiting on at the library become available at the same time...)

And last Friday, I got my first pair of glasses since 2007!  My prescription hadn't changed too much, so I never got another pair since the first ones were basically the same.  But then I did what I always do and lost them...  So after months of looking, I came to the realization that they were truly gone, so to the eye doctor I went to get some new ones.  I love them SO much!!
Can we also talk about how much clearer my skin is after only a week on the Whole30!!  CRAZY.

And since I've been getting up early in the mornings with Donny to make breakfast for us both, I've been spending my mornings reading the Bible.  I decided to read through the whole Bible for the first time this year, and I love it.  I love starting my days out in the Word in the stillness of the morning.

All in all, it's been a pretty great start to 2014!  :)

  1. That has been a great start to 2014! That food looks awesome!!!! I usually cook almost all of our meals, but I'm getting back to being more structured about it. We are not completely "whole" eaters, but we try to be very close. I can't wait to hear more updates!

  2. Before I even saw your comment about your skin I was about to say how beautiful your skin is! I'm very interested in learning more about the whole 30. My husband does low/no carb but maybe eating whole would be a better option. Glad it's going so well!!

  3. That's funny I was craving spaghetti squash last night but I don't think I can eat it yet. I love it and don't even care if J doesn't! That food looks yummy and what a great way to start the day! Morning prayer time always makes me feel better. :-)

  6. So proud of you for the Whole 30 thing! You're almost half way done! I am going to do some research on it and maybe try it out myself.

  7. Ooh good luck with the Whole 30! That's cool that you're seeing good results and I bet it's pretty empowering, knowing you're in control of that aspect of your health :) Way to go!

    The new glasses are so cute, too. This month looks like it's going well so far!

  8. Wow! You have been a VERY busy bee!! Go you on the WHOLE 30. It sounds really good and healthy--I feel like I should look into this during the last few months before our wedding to try and shed a little bit and get to a healthier state. I'm gonna have to look into it :)
    I already said it on Instagram, but I love the glasses :)
